Busy In The Kitchen

Once again, the wife was busy in the kitchen today.

She made 3 dozen corn dogs, which we freeze and then heat up for the kids when they want one. These are not your normal greasy corn dogs either, they are super delicious and yummy. Even the wife loves them.

She also made some homemade crullers today too.

I tell you what, she isn’t helping me lose those extra pounds I put on during the holidays, that’s for sure.

There’s Something About That Healthy Choice

Tonight, we pulled a fast one on our kids. You see, they never want to eat the normal foods that most kids eat. If you put spaghetti, lasagna, chicken noodle soup, or any other “normal” food in front of them, they scoff at the idea of eating it.

Tonight, I made a fresh spinach salad with tomatoes, hard-boiled egg, cheddar cheese, cucumbers, avocados, ham, and carrots. I also served up some baked whiting filets, baked potatoes, corn on the cob, and broccoli.

Yes, you guessed it, they loved it. All of it. Go figure.

Later this week I am going to attempt to cook my very first recipe video. If everything goes well, you will all see it too.

The Secret To Good Crumb Cake

Over the holidays Chef Tom posted a recipe for crumb cake. Not just any crumb cake mind you, but it was a copycat recipe for Sara Lee Crumb Cake.

Crumb cake has to be one of the most delicious things in the whole world. They’re good in the morning, they’re good with lunch, and they make a good dessert after dinner as well.

The problem with them, especially the Sara Lee variety, is that I can eat a whole box of them before I know what I’ve done, then I have to work to lose the extra weight afterward.

We needed some groceries tonight so we stopped by the local Piggly Wiggly. A lot of people laugh when I tell them we have a grocery store called the Piggly Wiggly, so I thought I would show you some proof.

I Love Kisses

The day I got my tooth pulled, I picked up some of these delicious Hershey’s Kisses. The difference with these? They are chocolate truffles and they are to die for.

Well, I wouldn’t want to die for one, but man, as soon as my jaw healed up, that was the first thing I tried, and it was pure heaven. And no, I wasn’t on the pain medication when I took them, so I know they are good.

Crispy Chicken Fingers? Yum!

I have a recipe for Crispy Baked Chicken, but it’s not quite like the one I saw over at Serious Eats yesterday.

One thing all our kids will eat, is chicken, so any time I come upon a new recipe for chicken, we have to try it.

Ingredients

  • 1 1/4 pounds boneless, skinless chicken breast halves, cut across into 1/2-inch-thick slices
  • 1/2 cup lowfat buttermilk
  • Cooking spray
  • 4 cups whole-grain corn cereal such as Corn Chex or corn flakes
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper
  • Procedure

    1. Preheat the oven to 400°F.
    2. Combine the chicken and buttermilk in a shallow dish. turning the chicken to coat it with the buttermilk. Cover and chill for 15 minutes. Coat two baking sheets with cooking spray.
    3. Put the cereal in a sealable plastic bag and crush with a rolling pin.
    4. Transfer the crumbs to a shallow dish and season them with the salt and pepper. Dip each piece of chicken in the cereal to fully coat and arrange on the prepared baking sheets. Bake until cooked through, about 8 minutes. Leave the chicken on the baking sheets to cool slightly. It will become crispier.

    They have a recipe for honey mustard sauce, but my kids don’t eat that, if you want it though, check out the Serious Eats website.

We Are Bread Eaters

This evening, my wife made the most delicious dinner, and it was so simple.

We had vegetable soup and sandwiches. Now this was no ordinary dinner you see.

The vegetable soup was made from a combination of vegetables from our garden and the state farmer’s market that we canned earlier this year. She added a beef stock (homemade of course), and the soup was absolutely delicious.

The best part of the meal though? The smell of fresh bread baking in the oven.

Needless to say, I am stuffed. I took some short video clips of her making the bread, nothing like a “recipe video” see you on some other sites, but I will piece them together for an episode of my Test Pattern video series when I get some time.

For now, sit back and imagine the smell of these delicious rolls.

A New Year For Angels

My wife made a delicious angel food cake for dessert on New Year’s Day. I think the strawberry glaze made from scratch was almost better than the cake itself.
