Earlier today, the wife roasted a chicken, so we would have the meat for a couple recipes that are coming up in the next few days.

When it was done roasting, she let it “rest” for 10 minutes. When she went back out to start slicing it up, it looks more like it “aged” 20 years.

Looks like someone forgot the botox. (It’s still going to be tasty though).

Finally, I get to share a recipe with you. The wife has had me on pretty tight leash when it comes to sharing all our new recipes. She is working on this new 5 week meal plan, and she intends to put it all together and then, and only then, do I get to share the recipes here. Sheesh. I will however keep posting photos, because it just might inspire you to make something similar (wink).

Anyway, here is a recipe she did today in the bread machine that came out absolutely awesome.
Ingredients:
1 cup plus 4 Tbsp. water
2 Tbsp. margarine or butter, softened
1/4 cup honey1 1/3 cups bread flour
1 cup minus 2 Tbsp. wheat flour
2 Tbsp. soy flour
3/4 cup 5-grain cereal
4 tsp. wheat germ
3 Tbsp. packed brown sugar
1 1/4 tsp. salt2 1/14 tsp. regular active dry yeast or
2 tsp. bread machine yeast or quick acting active dry yeast
Procedure:
Add all of the wet items to the bread machine, then add all the dry items. Add yeast on top of the dry items. If you have made bread in a bread machine before you know this.
Set the bread machine on the basic dough setting so the machine would knead the bread and allow it to rise the first time.
Punch down the dough and shape it into a loaf, placing it into a loaf pan.
Bake in a preheated 350 degree oven for 35-40 minutes.

I am beginning to really like this plan. We’ve had such well balanced meals, and I have reduced the portions I eat, so I am probably losing weight without even trying.

As part of our new “eating better” diet, the wife made a delicious loaf of rye bread.
I wanted to post the recipe but she is putting together a whole “eating right” menu plan that she intends to post when she has it all together. So for now, you’ll just have to enjoy the photos and imagine the wonderful smells as I post them.

This is one of the reasons why I have an issue with some organic foods. Organic means what? It usually means the food was grown without pesticides, artificial fertilizers, human waste, or sewage sludge. It also means they used no radiation or food additives in producing the food.
Where in the definition of “organic” does it mean “unwashed”? If anyone took the time to wash the greens this woman was preparing to eat, that tiny little frog that’s no bigger than the tip of her pinky finger, would have been discovered before it ended up on her plate.
You just don’t want to eat some greens.
That’s how a Brooklyn mom felt when she found a tiny frog comfortably nestled in the leaves of organic lettuce she was preparing to eat.
“I jumped away,” said 39-year-old Yvonne Brechbuhler, who described the green critter as no bigger than the tip of her pinky finger.
I’m all for eating healthy, but I am also for eating clean food.

About a week ago, I was cooking dinner and the stuff I was making in the oven was taking forever to finish, almost like the oven wasn’t hot enough. Then, two days ago, my wife was making some carrot muffins which were supposed to cook for 35 minutes or so, and 20 minutes into the baking, we could smell them burning. Sure enough, when we took them out, they were burnt.

Then she was making some fresh biscuits which also burnt when they were supposed to be about halfway done baking. Last night, we had baked salmon, and instead of 8-12 minutes to cook it took about 20-22 minutes for the filets to finish cooking.
I have never had a stove with a bad thermostat but it sounds like that may be our problem. My question is, are those easy to replace or do we have to buy a whole new stove? Is it worth it to have a repair guy come out here to the sticks, or can I do it myself. I just don’t know.

Around here, we’re gearing up for spring. The wife is working on the garden plans and I am preparing for many long nights canning all the good stuff that comes out of it.

Tonight, however, we took a break and ordered Chinese food, simply because the day got away from us and neither one of us felt like cooking (plus my mom wanted to come over to visit and order Chinese too). So we did.
We ordered all of our normal stuff again, which includes sweet and sour pork, Mongolian beef, and Kung Pao Shrimp, but my ordered Black Pepper Chicken, and let me tell you what, I am going to imitate that recipe if it kills me. It was soooo delicious. I can hardly wait for lunch tomorrow, when I eat the left over chicken for lunch.
